Purato Grillo Spumante Brut

We have had such fantastic results in making Spumante from Grillo grapes in Sicily that we have now made a Purato Grillo Spumante, a great addition to the range. The bubbles are very fine and gentle. The nose is super-fresh, with floral and citrussy notes. Perfectly dry, elegant, well-balanced on the palate, with a refined fruitiness and a refreshing burst of acidity. The ideal aperitif and pairs well with delicately flavoured seafood.
Grillo Spumante is still very unusual, giving consumers something genuinely different to talk about. A versatile, refined fizz to suit all kinds of occasions.

Grapes: 100% Grillo

Harvest: The Grillo grapes are picked very early in August, in order to retain their acidity.

Vinification: The grapes are picked in the cooler early hours of the day, to keep them as fresh possible and are transported as quickly as possible to the winery for de-stemming and very gentle pressing in a pneumatic press.
The solid particles are allowed to separate naturally from the juice, at which point the primary fermentation takes place.
Selected yeasts are added to the juice in temperature controlled stainless steel tanks, not exceeding 18°C for around 8-10 days, after which the wine is racked into smaller, closed stainless steel tanks.
The secondary fermentation is initiated by a very specific yeast in the closed stainless steel tanks.
The temperature is kept at 14°C in order for a very slow, gentle fermentation to take place, which ensures that the freshness and purity of fruit of the Grillo grapes are preserved. For maximum freshness, there is no Malolactic Fermentation.
