100% Glera, from selected vineyards in in the Veneto region.
The grapes are carefully picked at the beginning of September, around one week before they are fully mature. This is in order to maintain a high acidity level, a good structure and fresh, fruity aromas in the finished wine.
The grapes are destemmed and gently pressed in a pneumatic press. Prior to fermentation the juice is chilled to allow a natural separation of sediment and juice. After racking, selected yeasts are added to initiate the alcoholic fermentation. Fermentation takes place in temperature-controlled conditions of 18°C in stainless steel tanks for approximately 10 days.
The wine is dealcoholised using the vacuum evaporation technique. Using this method it is possible to remove the alcohol at a relatively low temperature of 20°C, thereby preserving the freshness and the varietal characteristics of the wine. Natural carbon dioxide is then added to achieve a perfect perlage.
Pale yellow in colour, with a fine and elegant perlage showing in the glass, this Sparkling 0% has an intense fruity bouquet of green apples and fresh pears, nuances of white flowers, and citrus touches. On the palate it is very fresh and perfectly balanced, supple and easy to drink.
Serve at 6-8°C for maximum aromatic expression. This is a versatile drink, perfect as an apertif or with fish dishes, gently spicy foods, or lighter desserts.
