A selection of the finest Nero d’Avola grapes, with a small portion of Frappato and Syrah.
The grapes are hand-picked: Nero d’Avola and Syrah in mid-September, Frappato about two weeks later.
De-stemming is followed by a particularly soft pressing and we use very frequent pumping over in the early part of fermentation. Once malolactic fermentation is completed the wines are blended together and aged in 30HL Slavonian oak barrels for about 12-18 months.
Deep red in colour with a powerful concentration of tobacco and vanilla, together with notes of blackberries, plums and spices. The wine is well balanced and harmonious and has very soft tannins.
Serve with lamb, wild boar and game in general, with aged cheeses, or saffron risotto.
